Shaved Cauliflower Salad

Serves 1-4, as a salad course

Ingredients:

1/2 head of a large cauliflower
1 medium sized radicchio, cored
6 inner celery stalks with leaves
1/4 cup chives
1/4 cup flat-leaf parsley leaves
1/2 cup honey glazed walnuts
2 teaspoons Dijon mustard
1/4 cup olive oil
Juice of 2 lemons
Juice of 1 orange
1 tsp water
4-5 medjool dates, pitted
salt/pepper

 

Shave the Cauliflower: Use a mandoline or sharp knife to thinly slice raw cauliflower into delicate, bite-sized pieces. You can also break it into florets and pulse a few times in a food processor for a fine, fluffy texture (but not mushy).

Slice the Radishes: Thinly slice the radishes using a mandoline or knife for crunch and color.

Chop the Herbs and Nuts: Finely chop the parsley and roughly chop the pistachios.

Mix the Dressing: In a small bowl, whisk together the lemon juice, lemon zest, olive oil, salt, and pepper to taste.

Combine the Salad: In a large bowl, combine the shaved cauliflower, sliced radishes, chopped parsley, and pistachios. Drizzle with the lemon-olive oil dressing and toss gently until well coated.

Taste and Serve: Adjust seasoning with more salt, pepper, or lemon juice if desired. Serve immediately for crunch, or let sit for 10–15 minutes to slightly soften the cauliflow
